Low Carb Low Fat Omelette


6 Raw eggs

1 cup diced tomatoes

1/2 cup diced red onion

1 whole diced Avocado

1 cup chopped spinach

1/2 cup shredded cheddar cheese

1/2 stick butter

Salt and pepper to taste



Break and pour eggs in a small bowl, and salt and pepper as desired and beat or mix thoroughly. Place butter in a hot pan and pour in eggs, wait about 2-3 minutes, add onion and cook for another 2 minutes, add tomatoes and cook for 1 minute, add spinach and cook for another 1 minute, add Avocado, cheese, and cook until it’s okay to fold,  roll or wrap the omelette. NOTE: cook on low heat and check continuously to avoid burning. This recipes produced 5 good servings breakfast for my family.
