Cabbage Egg Salad

Eating fresh whole food have numerous benefits that one cannot comprehend. It is really amazing how the body works. Some days one can’t help but be lazy and just want to sleep all day, but other days you feel pumped up and ready to take on the world. Healthy and clean eating can be a bit challenging, especially on those lazy days, or if you just flat-out hate spending time in kitchen. I am in love with my kitchen, (luckily), and I can say that I am blessed with a very wide mouth and huge appetite (sarcasm). For those lazy days that I do not feel like doing anything, I can just throw bunch of leaf together, toss in some form of protein, and off I go. Growing up as a child I hated cabbage. I didn’t like cabbage because of its smell. FYI, do not COVER cabbage in a bowl for later consumption because you will hate it for the rest of your life. Just let it air out in the refrigerator or on the cabinet. I learned that lesson in a hard way . The good news is, I love cabbage today for the love of life. You know how they say to always see a glass as half full rather than half empty, yeah! that’s how I resolved my issues with cabbage. I am now able to eat cabbage because I believe it has the best aroma and flavor I’ve ever tasted . I don’t use the word “smell” anymore because cabbage does not smell for the love of God. Cabbage is a must have keto food item. It is very low in carbohydrate and high in fiber which help with digestive issue that frequently occur with keto diet. The crunching taste of cabbage is pure heaven on earth. Anyways, enough of the cabbage rant. Now look down and let me know if you like what you see.

INGREDIENTS;

2 cups shredded cabbage

1 cup spinach

2 hard-boiled eggs

1 tbsp mayonnaise (Real mayonnaise)

DIRECTION;

Mix the cabbage, spinach, egg, and mayo together and you’re welcome!
