Spinach Stew

Healthy Versatile Spinach Stew for lunch or dinner.

Ingredients:

1 lbs goat meat (clean and cut)

1 lbs cat fish

10 cups sliced spinach

5 large tomatoes (blend)

1/2 cup onion (diced)

1 tbs olive oil

a pinch of salt, pepper, curry, and thyme to spice up the taste.

Direction:

Add goat meat and fish in a pot and bring to a boil. Add half of the diced onion, salt, pepper, curry, and thyme and let it cook for about 20 minutes. Add the fish and cook for another 15 minutes. Set the meat and fish aside. In another pan, add 1 Tbs olive oil, and add the remaining onion, stir for about 1 minute. Add the blended tomato to the onion, cover, and cook in low heat for about 10 minutes. add a pinch of salt, pepper, curry, and thyme to the tomato sauce and let it cook for another 10 minutes. Add the meat mixture to the tomato sauce and cook for 5 minutes. Add the sliced spinach and cook for about 10 minutes, be careful not to overcook the spinach. Stir and serve on a bed of rice, potato, or by itself. For me I ate mine with what is called fufu made from just cabbage and husk  which are keto complait, but you can use this soup for anything.
