What’s for dinner that is quick, tasty, and healthy? Well, I can tell you that my Avocado Veggie Dinner is a dinner your family will eat and want more. Check out the recipes below.
2 Red, 2 Yellow, & 2 Green bell peppers (Cut lengthwise)
100% Grass Fed beef (Cut lengthwise)
1 tsp extra virgin olive oil
a pinch of salt and pepper to taste
1 tsp minced garlic
1 tsp minced ginger
1 cup diced red onion
1 Whole lemon
1 Whole avocado (Sliced)
Add 1 tsp extra virgin olive oil to a warm pan or skillet, add the onion and stir for 1 minute. Add the garlic and ginger and stir for another 1 minute. Add the meat and cook for 5 minutes, stir and cook again for another 5 minute. Place the meat in a separate bowl and add the mixed bell peppers to the pan and cook for about 5 minutes. Add the meat to the bell peppers, cover the pan, and cook on low heat for about another 10-15 minutes, but be careful not to over cook your veggies. After about 15 minutes, set aside, add sprinkle with lemon juice and add the sliced avocado. Serve with rice, rolled up on a lettuce leaf, or wrap of your choice and enjoy!
